Cottage cheese banana bread is the ultimate cozy, protein-packed twist on the classic loaf—moist, hearty, and naturally sweetened.

  • 3 ripe bananas
  • 1 cup cottage cheese (full-fat or low-fat)
  • 2 eggs
  • 1/4 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1 1/2 cups oat flour or whole wheat flour

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a large mixing bowl, mash the bananas. Add cottage cheese, eggs, honey, and vanilla extract. Whisk until well combined.
  3. Add oat flour, baking soda, baking powder, cinnamon, and salt. Stir until just combined—do not overmix.
  4. Pour the batter into the greased loaf pan and smooth the top.
  5. Bake for 45–55 minutes or until a toothpick inserted comes out clean.
  6. Let the bread cool for 10–15 minutes before slicing and serving.

Notes

Use room temperature ingredients for best texture. Add chopped walnuts, chocolate chips, or dried fruit for extra flavor. Tent with foil if browning too quickly.
