A peasant dish with royal flavor—Ful Medames is Egypt’s national vegan stew, slow-cooked with fava beans, olive oil, lemon, and cumin.

Ingredients

  • 1 can (or 1.5 cups) cooked fava beans
  • 2 tbsp olive oil
  • 1 clove garlic, minced
  • 1 tsp cumin
  • Juice of 1 lemon
  • Salt to taste
  • Chopped parsley and tomatoes for garnish

Instructions

  1. Heat fava beans in a saucepan and mash lightly.
  2. Add garlic, olive oil, lemon juice, cumin, and salt.
  3. Stir and simmer for 5–10 minutes.
  4. Top with parsley and chopped tomatoes.
  5. Serve warm with pita or flatbread.
